Dining at the Bearfoot Bistro is more than a meal: It’s a culinary journey

Executive Chef Melissa Craig’s food starts with the season – the bounty, the colours. It’s the combination of a familiar flavour with a new technique, a local ingredient given an international twist. The exceptional seafood and wild game found in British Columbia is complemented by the best of the best available from around the globe: Wagyu beef, Perigord truffles, Berkshire pork… Her quest for perfection never ends.

Let our wine director pair the perfect wines to complement each dish, or consult our sommeliers and select your own from our extensive cellar.

No meal is complete without something sweet, and Executive Pastry Chef Dominic Fortin is a master of desserts and petits fours. Select one of his stunning original creations, or opt for the theatrics of our signature nitro ice cream, prepared tableside with a Bearfoot Bistro flourish.

Come swing a saber and experience the thrill as blade hits bottle and the bubbles flow.

Join us in the Bearfoot Bistro’s underground wine cellar and learn about a tradition that dates back to the Napoleonic era, when cleanly sabering the top off a bottle of Champagne meant good luck in the battle to come.

Surrounded by over 20,000 bottles of the world’s best vintages, pick your favourite bubbly and create your own luck, saber in hand. Then raise a toast with your dining companions and enjoy the fruits of your adventure. We package your cork in a custom presentation box for you to take home and impress your friends with your swashbuckling skill.

From sophisticated cocktail parties to elegant multi-course dinners, the Bearfoot Bistro’s underground wine cellar offers the ultimate in private dining. Entered directly from the restaurant, the wine cellar provides a luxurious and intimate space in which to host your special event.

Lining the walls from floor-to-ceiling are more than 20,000 bottles that make the Bearfoot Bistro’s collection the largest in Western Canada – a perfect backdrop to a celebration featuring the best in food and wine. With the attention-to-detail and high service standards the Bearfoot Bistro is known for, we promise your personal or corporate event will be an unforgettable experience.

Experience an exhilarating flight of sub-zero vodka. We provide the parka. Just bring your sense of adventure.

At -32C (-25F) the Ketel One Ice Room is the world’s coldest vodka tasting room – and the only permanent sub-zero vodka room in Canada. With more than 50 vodkas from across the globe and examples distilled from everything from rye, wheat, and soya to hemp seeds, this unique Bearfoot Bistro experience is not to be missed.

Wrapped in our Canada Goose, Arctic-ready parkas, you’ll feel comfortable and cozy as our vodka expert explains how the intricacies of distillation and filtration affect the flavour profile of the finished product.

Taste four vodkas of your choice, and discover how the extreme environment enhances the flavour while minimizing the alcohol burn.

Pull up a front row seat to the action and dine in the heart of our kitchen. Sit back as we bring a sense of theatrical anticipation and excitement to your visit with this unforgettable behind-the-scenes experience.

Take a seat at our pewter bar with its spectacular rail of ice designed to hold and keep your glass of Champagne perfectly chilled. Have our dedicated oyster shucker prepare a tray of the day’s catch while you browse the appetizing bar menu from Executive Chef Melissa Craig. Or opt for a full dinner at the bar. Have one of our mixologists craft your favourite classic cocktail, or try one of our seasonal originals. Enjoy an apéritif before dinner. Come back for a nightcap.

The Champagne Lounge is open for après-ski until dinner service, offering a variety of Champagnes, oysters, cocktails and small batch microbrews.

Looking for late night fun? On Saturday nights, the Champagne Lounge lights up its disco ball, fires up the DJ and provides a sophisticated venue for post-dinner drinks and dancing. It’s the best party in town.

Come summer, when the sun beats down on Whistler, there is nowhere as glamorous as the Bearfoot Bistro’s patio. We take our Champagne Lounge al fresco, moving a full bar, oyster and dinner service outdoors. Relax on a luxurious sofa surrounded by tropical plants, shaded by palm trees and our outsized parasol. As night falls, we fire up the signature Bearfoot Bistro flames for the most sophisticated summer night experience in town.
